The weather is starting to warm up, so I’ve been able to comfortably enjoy my morning coffee on the screen porch for the past few days.
Cookies count as breakfast when they’re oatmeal right? 😉
Sitting out here has me dreaming of spring which of course has my mind thinking about giving our screen porch a little sprucing. We are going to need to re-stain the floor out here this year…….and if we have to re-stain we may as well choose a different color right? I’m thinking grey – a nice brown grey – not too cool or too warm. I’d also like to add a bit more color out here as well as a little more pattern.

But for now I’m just scheming…..and eating…..and drinking lots of coffee. ;)
Gluten Free Oatmeal Chocolate Chip Cookies
I bake about twice a month so that my kids will have a little something special to look forward to in their school lunches. But I tend to treat myself as well. 😉 These cookies only take about 10 minutes to prep and about 10 to 15 minutes to bake, so you’re over and out in less than 25 minutes which isn’t half bad for a homemade treat. Somehow the oatmeal makes them seem “healthy”.
Even my non-gluten free friends love these cookies! They are almost like scones but not as dry. When I make them to serve at parties for adults I like to sprinkle a little sea salt on top immediately after I pull them out of the oven……makes them even tastier as well as fancier. 😉
1 cup Gluten Free Rolled Oats
1 1/2 cups All Purpose Gluten Free Flour – (I like Bob’s Red Mill.)
1 cup Raw Sugar
1/2 cup Butter (substitute Coconut Oil for a dairy free version)
2 Eggs (You can use a chia seed egg replacer if you’re vegan. Flax seed doesn’t work as well.)
1 tsp Vanilla
1/2 tsp Salt
1/2 tsp Baking Soda
1/2 cup Chocolate Chips ( I like to use these Enjoy Life Mega Chunks!)
Preheat oven to 350. Combine all ingredients. Scoop onto parchment paper lined baking sheet. Bake or 10 to 15 minutes or until lightly browned.
I really love these because they aren’t overly “oatmeal-ly”, if that makes any sense. You can also change this recipe up – add walnuts instead of chocolate chips, or make them a little more brunch acceptable by adding dried cranberries……so many different ways to play with this one! Enjoy!
