As you already know my family and I have been gluten free since last August, and we made the jump to paleo in January. I know a lot of people refer to it as a diet, but it certainly doesn’t feel like I’m dieting. Does this look like diet food to you?
I don’t eat treats like this all the time, but it is nice to be able to indulge my sweet tooth from time to time and still stay true to the paleo lifestyle.
I found this recipe for flourless brownies at Homemade Mommy and made a couple tweaks to create this delicious paleo brownie pie. My chocolate-loving son is a major fan and has requested that I make this pie for his birthday.
1 cup unsweetened cocoa powder
3/4 cup raw honey
3 tbsp coconut oil
2 tsp vanilla
pinch of salt
Preheat oven to 350. Combine all the ingredients (melt the coconut oil before adding to your mixture). Lightly grease a pie pan with coconut oil. Pour batter into the pan and bake for about 30 minutes. Let it cool completely before frosting.
The frosting recipe I used is from the Paleo Baking Company. For this brownie pie, I half the recipe. Otherwise, you have a lot of leftover frosting. This frosting is so good! I could literally spoon it into my mouth – no lie.
The combination of the brownie pie and this frosting is off the charts delish! This pie is perfect for the serious chocolate lover! I typically give half of it away so I don’t over-indulge. 😉
The paleo life has been really good to me, and I’m excited to share more about my journey in the weeks to come. I’ve never felt better – and I’ve never fed my body so well either. I look at food in a whole new way now, and I’ve truly fallen in love with cooking and baking.
